How you will enjoy your day:
To elevate and personalize wine service and enhance guests’ and team members’ wine knowledge. Improve wine sales in all outlets excluding banquet & special events by overseeing purchase, inventory and be responsible for selling wines in the outlets. Create special programming for guests to position F&B as a destination.
Work Performed:
- Run daily wine sales report in InfoGenesis.
- Complete the daily wine requisition for by-the-bottle and by-the-glass wines, today for tomorrow (minimum one day in advance)
- Check in the requisition and put away in the wine cellar.
- Organize Wine Cellar(s), print and/or reprint wine list as needed to ensure accuracy.
- Complete the wine order and email to purchasing buyer.
- Put away the wine order and manage any out-of-stock or missing orders in collaboration with the purchasing department.
- Organize Wine Cellar(s), print and/or reprint wine list as needed to ensure accuracy.
- Remove 86’d items, add new items and update vintages on a weekly basis.
- Ensure the Wine Lists is accurate and free of typos/errors.
- Maintain a list that is well-balanced in terms of style, region and price point.
- Ensure POS system is up-to-date prior to new item launch.
- Meeting with distributor representatives (1-2 meetings/month) to replace out of stock items and enhance the list by introducing new items.
- Communicate with purchasing to properly onboard new product.
- Ensure proper mise-en-place ahead of service: polished glassware, decanters, Coravin system, serviettes.
- Knows all contents of menus (i.e. food, wine, beer and liquor).
- Consults with guests on their wine choices.
- Takes wine orders correctly and efficiently.
- Provides proper wine service according to CMS industry standards in a timely fashion.
- Offer guidance to guests and Support each resort outlets.
- Participate, conceptualize, design & execute wine related revenue generating events.
- Assists the managers in keeping the par levels of the wine glassware stocked at all times.
- Report to Food & Beverage Manager before ending work shift.
- Provides weekly wine education at restaurant pre-shift meetings.
- Print and review wine specifications sheet daily with service staff.
- Conduct wine seminars for the team members and guests.
- Conduct private wine tastings when purchased by the guests.
- Complete the annual application for the Wine Spectator Restaurant Awards and seeks opportunities to promote resort and F&B via wine promotions and awards.
- Maintains a positive and professional attitude towards guests and co-workers.
- Acts as an ambassador of Enchantment by speaking positively of the Resort at all times.
- Fosters a work environment of teamwork and mutual service by assisting co-workers and other departments as necessary to ensure guest satisfaction.
- Knows resort layout, and information of the clubhouse and directly relates that information properly to guests.
- Other duties as assigned
Projected hours/shifts are based on business level, may vary from week to week.
Minimum Requirements:
Level I Court of Master Sommelier Certification
High school diploma or equivalent. Must work well with or without direct supervision. Must be neat and well groomed at all times. Needs to be flexible, self motivated, positive and have a professional attitude towards guests, co-worker and management. Must maintain current food handler’s certification. Prior bartending and serving experience required. English skills necessary to communicate with guests. Computer skills helpful. Knowledge of Arizona liquor laws.
Compensation:
- $18/hour
- 3% of total wine Sales in F&B outlets excluding Banquet & Special Event
- Service Charge for Wine Classes TBD
