Description

Basic Function: Prepare breads and pastries, including preparing dough and filling, proofing, baking and decorating as appropriate

Work Performed:

  1. Set up pastry equipment for service
  2. Demonstrate a working knowledge of pastry techniques, preparation, storage and sanitation
  3. Organize and prepare pastry menu items for meal services with speed and accuracy
  4. Know and prepare for Banquet Event Orders as needed related to pastries
  5. Bake breads and pastries to quality standards
  6. Inspect and monitor food and food preparation standards to maintain quality
  7. Review production sheet to understand variety of baked good to be produced daily
  8. Prepare and cook food according to recipes, quality and presentation standards and food prep checklists
  9. Maintain kitchen logs for food safety program compliance
  10. Keep Pastry Chef informed of excess food items for planning of daily specials.
  11. Safely and appropriately use baking and measuring tools/equipment/appliances to prepare baked foods
  12. Follow and ensure compliance with food safety handling policies and procedures, including personal hygiene procedures
  13. Check and ensure correct temperatures of kitchen appliances and food and report issues to management
  14. Assist Pastry Chef with hiring, training, scheduling and motivating employees
  15. Maintains overall cleanliness of pastry shop storage and refrigeration areas and sees to rotation of bakeshop items
  16. Foster an environment of teamwork and mutual service by assisting coworkers and other departments as necessary to exceed our guests expectations
  17. Act as an ambassador of Enchantment by speaking positively of the Resort at all times
  18. Other duties as assigned

Qualifications

Minimum Requirements:

High school diploma or equivalent and 2+ years minimum kitchen experience necessary. Prefer culinary degree with emphasis in pastry. Attention to detail and ability to multi-task many priorities. Self motivated, ability to work with little supervision and organized. Must be dependable. Must be comfortable communicating with staff with Basic English. Must maintain current food handlers certification.
