Basic Function: Supervise and administer the pastry shop operation but not limited to, coordination of new menu ideas and utilization of products to maximize customer satisfaction and control of food costs, oversee pastry preparation, inventory & portion control and ordering of all items necessary for pastry operation

Work Performed:

  1. Supervise the pastry shop to insure compliance with the resorts objectives and the health and safety of all employees and guests
  2. Ensure timely ordering of outside pastry items as necessary
  3. Train and supervise pastry staff in the proper techniques of food/pastry handling, food/pastry preparation and cost control of high quality food/pastry products
  4. Interview, hire, train and review performance of pastry staff
  5. Observe safety and legal requirements as to the health and labor departments, maintain all pastry shop areas in the highest standards of cleanliness at all times
  6. Enforce the use of standard recipes for all pastries to insure proper portion control, uniformity of taste and quality
  7. Create new pastry menu items and test new pastry menu items to determine market acceptance
  8. Ensure recipes are followed
  9. Maintain the highest quality food/pastry product in preparation and purchase.
  10. Continuously check the plate presentations, use of proper recipes and portions of food/pastry to the specifications
  11. Control inventory and ordering of food/pastries, cleaning equipment, cleaning supplies and utensils necessary for food/pastry production
  12. Implement ways to use leftover bread and pastry items
  13. Maximize profitability through proper food/pastry and labor cost controls
  14. Monitor labor to be in accordance with department and resort guidelines, on a daily basis
  15. Maintain cleanliness and sanitation of pastry shop
  16. Interact with guests as necessary on the floor
  17. Assist Executive Chef with budgeting and expense control
  18. Act as an ambassador of Enchantment by speaking positively of the Resort at all times
  19. Foster a work environment of teamwork and mutual service by assisting coworkers and other departments as necessary to exceed our guests’ expectations
  20. Other duties as assigned

Responsibility & Authority:

  1. Maintain a high level of guest service at all times in all quality product
  2. Uphold the resort commitment to hospitality
  3. Work closely with all departments to ensure guest service levels are being met
  4. Deal effectively with all departments with regular communication
  5. Manage and supervise pastry staff and operations

Minimum Requirements:

Culinary degree or equivalent related work related experience and/or training. Prefer 2+ years’ prior supervisory skills and hotel/resort culinary/food and beverage operations experience. Must have strong organizational skills, excellent written and verbal communication skills and be able to perform and prioritize multiple tasks with ease. Computer skills required. Strong guest and team member relations skills. Ability to effectively present information and respond to questions from groups of managers, clients, customers and the general public. Must maintain current food handler’s certification
